Chicken Stir-Fry Recipe

Stir-frying originated about 1,500 years ago in China, but we think this chicken stir-fry recipe is timeless! This aromatic recipe uses garlic, ginger, and bell peppers and makes 4 servings--perfect for batch cooking or an easy, family dinner.


Ingredients:

  • 1 pound (450g) boneless, skinless chicken breasts, cut into thin strips

  • 2 tablespoons olive oil or avocado oil

  • 3 cloves garlic, minced

  • 1-inch piece of fresh ginger, peeled and minced

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1 medium zucchini, sliced

  • 1 cup broccoli florets

  • 1 cup snap peas

  • 2 tablespoons soy sauce (or tamari for gluten-free)

  • 1 tablespoon oyster sauce

  • 1 teaspoon sesame oil

  • Salt and pepper to taste

  • Optional garnish: sliced green onions and sesame seeds


Instructions:

  1. Heat a tablespoon of olive oil or avocado oil in a large skillet or wok over medium-high heat.

  2. Add the chicken strips, and cook them until they are lightly browned and cooked through, approximately 4-5 minutes.

  3. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add and heat another tablespoon of oil. Then, add the minced garlic and ginger, and sauté for about 1-2 minutes until fragrant.

  5. Add the sliced bell peppers, zucchini, broccoli florets, and snap peas to the skillet. Stir-fry for about 4-5 minutes or until the vegetables are crispy.

  6. Return the cooked chicken to the skillet and mix with the vegetables.

  7. In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil. Pour the sauce mixture over the chicken and vegetables in the skillet.

  8. Stir-fry everything together for another 2-3 minutes, ensuring that the sauce is evenly distributed and coats the chicken and vegetables.

  9. Remove the skillet from heat, and garnish with salt, pepper, sliced green onions, and sesame seeds if desired.

  10. Serve, and enjoy!
